Ingredients
- 16 oz jar roasted red peppers - drained*
- 1 1/2 cups chicken bone broth (can sub vegetable broth or regular chicken broth)
- ~5 oz feta
- 1 tablespoon olive oil
- 1 medium shallot - finely chopped
- 4-6 cloves garlic - minced
- 1/3 cup finely chopped parsley
- 1 teaspoon za'atar
- 1/2 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cans cannellini beans - drained (cans should be 15 oz)
- 3-5 handfuls spinach (you don't need to be exact here, spinach cooks down easily)
Instructions
- Add red peppers, broth and feta to a blender. Blend until smooth.
- Heat oil over medium heat in a skillet. Add shallot and cook for 5 minutes. Add garlic, salt, pepper, za'atar' paprika, cumin and parsley. Cook for another 5 minutes.
- Add red pepper mixture and beans to the pan. Partially mash the beans (about 1/4 of the beans) and bring to a simmer. Simmer for 10-15 minutes, being careful not to boil and stirring occasionally.
- Turn heat to low and fold in spinach. Serve and enjoy.
