Ingredients
- 3 large eggs
- 1 c. (120 g.) all purpose flour
- 1 c. whole milk
- 2 tsp. finely grated orange zest, plus more for sprinkling
- 1/4 tsp. kosher salt
- 10 tbsp. granulated sugar, divided
- 6 tbsp. unsalted butter, melted, cooled, divided
- Cooking spray
- 1 1/2 c. fresh cranberries
- 2/3 c. fresh orange juice
- 1 tsp. ground cinnamon
- A popover pan
Instructions
- Arrange a rack in center of oven; preheat to 400°. In a blender, blend eggs, flour, milk, orange zest, salt, 2 Tbsp. sugar, and 2 Tbsp. butter, scraping down sides as needed, until smooth, about 1 minute. Let sit 5 to 10 minutes.
- Meanwhile, place popover pan in oven to preheat. You will likely smell the pan once it gets heated through. Spray each popover mold with cooking spray. Divide batter among prepared molds.
- Bake popovers until very puffed, firm to the touch, golden, and crackly, 30 to 35 minutes. Let cool slightly.
- Meanwhile, in a medium saucepan over medium heat, bring cranberries, orange juice, and 2 Tbsp. sugar to a simmer. Cook, stirring occasionally, until thickened but still saucy, 8 to 10 minutes.
- Brush popovers with remaining 4 Tbsp. butter. In a small container, mix cinnamon and remaining 6 Tbsp. sugar. Generously sprinkle tops of popovers with cinnamon sugar.
- Arrange popovers standing up on a platter. Spoon cranberry mixture over.
