Cowboy Butter Chicken Linguine

Ingredients

  1. ½ cup unsalted butter, melted
  2. 3 cloves garlic, minced
  3. 1 tablespoon Dijon mustard
  4. 1 teaspoon smoked paprika
  5. ½ teaspoon cayenne pepper (adjust to taste)
  6. 1 tablespoon lemon juice
  7. 1 teaspoon honey
  8. ½ teaspoon salt
  9. ½ teaspoon black pepper
  10. 1 tablespoon fresh parsley, chopped
  11. 1 teaspoon fresh chives, chopped
  12. ½ teaspoon red pepper flakes (optional for extra heat)
  13. 2 boneless, skinless chicken breasts, cut into thin strips
  14. 1 teaspoon salt
  15. ½ teaspoon black pepper
  16. 1 teaspoon smoked paprika
  17. ½ teaspoon garlic powder
  18. 1 tablespoon olive oil
  19. 12 oz linguine
  20. 1 tablespoon salt (for boiling water)
  21. ½ cup reserved pasta water
  22. Freshly grated Parmesan cheese
  23. Additional parsley and chives
  24. Lemon wedges

Instructions

  1. Step 1: Prepare the Cowboy Butter

In a small bowl, whisk together the melted butter, minced garlic, Dijon mustard, smoked paprika, cayenne pepper, lemon juice, honey, salt, and black pepper.
  2. Stir in the fresh parsley, chives, and red pepper flakes if using. Set aside to allow the flavors to meld.
  3. Step 2: Cook the Chicken

Season the chicken strips with salt, black pepper, smoked paprika, and garlic powder.
  4. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 5-7 minutes until golden brown and cooked through.
  5. Remove the chicken from the skillet and set aside.
  6. Step 3: Cook the Linguine

Bring a large pot of salted water to a boil.
  7. Cook the linguine according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
  8. Step 4: Combine Everything

In the same skillet used for the chicken, reduce the heat to low and pour in the cowboy butter.
  9. Add the cooked linguine and toss to coat in the sauce. If needed, add reserved pasta water a little at a time to achieve the desired consistency.
  10. Return the cooked chicken to the skillet and mix well.
  11. Step 5: Garnish and Serve

Plate the pasta and top with freshly grated Parmesan, more chopped parsley, and chives.
  12. Serve with lemon wedges on the side for an extra burst of freshness.
