Sugar-Free Cottage Cheese Chocolate Mousse

Ingredients

  1. 2 cups full-fat cottage cheese
  2. 1/4 cup unsweetened cocoa powder
  3. 2–4 tablespoons powdered sugar-free sweetener, to taste
  4. 1/2 teaspoon vanilla extract, optional
  5. Pinch of salt, optional
  6. 1–2 teaspoons unsweetened almond milk, only if needed for blending
  7. Sugar-free whipped cream
  8. Fresh raspberries or strawberries
  9. Unsweetened coconut flakes
  10. Chopped walnuts, pecans, or almonds
  11. Sugar-free dark chocolate shavings

Instructions

  1. Add the cottage cheese, unsweetened cocoa powder, powdered sugar-free sweetener, vanilla extract, and salt to a high-speed blender or food processor.
  2. Blend until completely smooth and creamy. Stop to scrape down the sides as needed, then blend again until no cottage cheese curds remain.
  3. If the mixture is too thick to blend, add 1–2 teaspoons of unsweetened almond milk and blend again.
  4. Taste the mousse and add more sugar-free sweetener if desired. Blend briefly to combine.
  5. Divide the mousse between 2 serving cups or small dessert bowls.
  6. Cover and refrigerate for at least 1 hour. For the thickest texture, chill overnight.
  7. Before serving, add your favorite toppings such as sugar-free whipped cream, fresh berries, chopped nuts, coconut flakes, or sugar-free dark chocolate shavings.
  8. Serve chilled.
