Ingredients
- 4Clove Garlic
- 20g Fresh Ginger
- 140g Korma Curry Paste
- 500g Red Lentil
- 1x 400ml Can Coconut Milk
- 1.1L Water
- 450g Halloumi
- 2tbsp Honey
- 20g Fresh Coriander
- Olive Oil
- Salt
- Black Pepper
Instructions
- First cut the halloumi into 2cm chunks, place incold water to soak. Rinse the red lentils under cold water until the water runs clear, then finely grate the garlic and ginger.
- Heat a large saucepan over a medium heat with a drizzle of olive oil. Add the curry paste and fry for a couple of minutes until fragrant. Stir in the garlic and ginger and cook for another minute.
- Add the lentils, coconut milk and water. Bring to the boil, then turn the heat down and simmer for 15 mins, or until the lentils are soft and the dal has thickened. Season with salt and pepper to taste.
- Place a frying pan over a medium-high heat. Add the halloumi and cook without oil until golden and charred on all sides.
- Reduce the heat slightly and stir through the honey so it coats the Halloumi and turns glossy and sticky.
- Roughly chop the coriander. Spoon the Dal into bowls, top with the sticky halloumi and finish with the coriander. This makes a substantial serving but if you'd like to bulk out the meal you can also serve with rice or naan.
