Slow Cooker Chicken Noodle Soup

Ingredients

  1. 1 1/2 pounds boneless, skinless chicken breasts
  2. 3 medium carrots, peeled and thinly sliced
  3. 1 small sweet onion, finely diced
  4. 3 garlic cloves, minced
  5. 2 bay leaves
  6. 2 teaspoons Italian seasoning
  7. 2 teaspoons kosher salt
  8. 1 teaspoon black pepper
  9. 8 cups unsalted chicken stock
  10. 1/2 pound spaghetti noodles ((1/2 of a 16 ounce box))
  11. fresh chopped parsley, for garnish ((optional))

Instructions

  1. Place 1 1/2 pounds boneless, skinless chicken breasts, 3 medium carrots, peeled and thinly sliced, 1 small sweet onion, finely diced, 3 garlic cloves, minced, 2 bay leaves, 2 teaspoons Italian seasoning, 2 teaspoons kosher salt, and 1 teaspoon black pepper into an 8-quart slow cooker.
  2. Pour in 8 cups unsalted chicken stock and stir to combine. Place on low for 5-6 hours or high for 3-4 hours until the chicken and vegetables are tender.
  3. Dice, shred, or chop the chicken and add it back to the pot.
  4. Break 1/2 pound spaghetti noodles into 2-3 inch pieces and place them in the pot. Stir to combine, making sure to cover the noodles in the liquid.
  5. Continue to cook on low for 25-30 minutes, stirring halfway through until the noodles are tender. Taste, and adjust seasoning if necessary.
  6. Serve topped fresh chopped parsley, for garnish (optional) and enjoy!
