Ingredients

  1. Cooking spray, for the baking sheet
  2. 2 lb. Brussels sprouts, trimmed and halved
  3. 1/4 c. olive oil
  4. 3 tbsp. balsamic vinegar
  5. 2 tbsp. packed light brown sugar
  6. 2 tbsp. country dijon mustard
  7. 2 tbsp. fresh orange juice (from 1/2 an orange)
  8. 1 1/2 tsp. kosher salt
  9. 1/2 tsp. black pepper

Instructions

  1. Preheat the oven to 425°F. Line a baking sheet with aluminum foil and spray with cooking spray.
  2. Add the Brussels sprouts to the prepared baking sheet. In a medium bowl or measuring cup, whisk together the oil, vinegar, brown sugar, mustard, and orange juice. Pour about ½ cup of the glaze evenly over the Brussels sprouts and sprinkle with the salt and pepper and toss to coat.
  3. Arrange the Brussels sprouts cut-side down and roast until they begin to turn golden, 20 to 25 minutes. Stir and return to the oven to bake until the tender and caramelized, 10 to 15 minutes more.
  4. Drizzle the Brussels sprouts with the remaining glaze and toss before serving.
