Creamy Garlic & Herby Chicken Gnocchi

Ingredients

  1. 1 Red Onion
  2. 350g Chicken Breast
  3. 2Clove Garlic
  4. 10g Fresh Parsley
  5. 500g Gnocchi
  6. 1tbsp Garlic Italian Seasoning
  7. 0.5tbsp Dried Mixed Herbs
  8. 90g Sun-Dried Tomato in Oil
  9. 120g Light Cream Cheese
  10. 100ml Water
  11. 50g Grated Cheddar & Mozzarella Mix
  12. Parmesan (to serve)
  13. Salt
  14. Black Pepper

Instructions

  1. Finely dice the onion. Dice the chicken into chunks. Crush the garlic and finely chop the parsley.
  2. Heat the air fryer to 180°C, then tip the gnocchi into the air fryer with ½ tbsp oil from the sundried tomato jar. Cook for around 15 mins until crispy.
  3. Meanwhile, heat a large frying pan with another ½ tbsp sun-dried tomato oil. Add the onion with some salt, then cook for a few minutes to soften. Add the chicken and garlic and cook until cooked through – about 10 minutes.
  4. Add the seasoning, mixed herbs, sun-dried tomatoes and cream cheese to the pan along with the water. Mix it together for a few minutes.
  5. Stir in the crispy gnocchi, the grated cheese and a small handful of parsley.
  6. Season to taste, add a splash of water, if you'd like it saucier, then share between bowls and top with more parsley and Parmesan.
