Coffee Cake with Pancake Mix - High Protein, Sugar Free!

Ingredients

  1. ⅓ cup Protein Pancake Mix (42g, or any just-add-water pancake mix)
  2. ⅓ cup Rolled Oats (30g, or more Pancake Mix)
  3. ⅓ cup Zero Calorie Brown Sugar Replacement (64g)
  4. 1½ tsp Cinnamon
  5. ¼ cup Semi-Soft Butter (56g)
  6. 1 cup Protein Pancake Mix (126g, or any just-add-water pancake mix)
  7. ½ cup Vanilla Whey-Casein Protein Powder (45g)
  8. ⅓ cup Unflavored Plant Protein Powder (or Whey-casein, 30g)
  9. ¾ tsp Cinnamon
  10. 1 cup Non-fat Plain Greek Yogurt (225g)
  11. ¾ cup Unsweetened Applesauce (180g)
  12. 2 Eggs
  13. 1 Egg White (30ml)

Instructions

  1. For the Streusel:

In a small bowl, combine the pancake mix, rolled oats, brown sugar replacement and cinnamon. Add the semi-soft butter and use your fingers or a fork to work it in until the mixture looks like wet sand with small clumps. Work quickly so the butter stays cold.
  2. For the Cake:

Preheat oven to 350°F. Line an 8x8" baking pan with parchment paper.
  3. In a large bowl, whisk the pancake mix, both protein powders and cinnamon together until no clumps remain.
  4. In a second bowl, whisk the Greek yogurt, applesauce, eggs and egg white until smooth.
  5. Pour the wet ingredients into the dry and fold gently until just combined. Stop as soon as the dry streaks disappear. Do not overmix - this is what keeps the cake tender.
  6. To Bake:

Pour half the batter into the prepared pan and spread it to the edges. Sprinkle half the streusel evenly over the top.
  7. Pour the remaining batter over the streusel layer and spread it gently to cover. Top with the remaining streusel.
  8. Bake 30-32 minutes, until a toothpick inserted in the center comes out clean but with a few moist crumbs.
  9. Transfer to a wire rack and cool completely before slicing into 16 pieces.
