Works with Kodiak or any pancake mix. Yield: 16 Prep time: PT10M Cook time: PT30M Total time: PT40M Ingredients - ⅓ cup Protein Pancake Mix (42g, or any just-add-water pancake mix) - ⅓ cup Rolled Oats (30g, or more Pancake Mix) - ⅓ cup Zero Calorie Brown Sugar Replacement (64g) - 1½ tsp Cinnamon - ¼ cup Semi-Soft Butter (56g) - 1 cup Protein Pancake Mix (126g, or any just-add-water pancake mix) - ½ cup Vanilla Whey-Casein Protein Powder (45g) - ⅓ cup Unflavored Plant Protein Powder (or Whey-casein, 30g) - ¾ tsp Cinnamon - 1 cup Non-fat Plain Greek Yogurt (225g) - ¾ cup Unsweetened Applesauce (180g) - 2 Eggs - 1 Egg White (30ml) Instructions 1. [For the Streusel:] In a small bowl, combine the pancake mix, rolled oats, brown sugar replacement and cinnamon. Add the semi-soft butter and use your fingers or a fork to work it in until the mixture looks like wet sand with small clumps. Work quickly so the butter stays cold. 2. [For the Cake:] Preheat oven to 350°F. Line an 8x8" baking pan with parchment paper. 3. [For the Cake:] In a large bowl, whisk the pancake mix, both protein powders and cinnamon together until no clumps remain. 4. [For the Cake:] In a second bowl, whisk the Greek yogurt, applesauce, eggs and egg white until smooth. 5. [For the Cake:] Pour the wet ingredients into the dry and fold gently until just combined. Stop as soon as the dry streaks disappear. Do not overmix - this is what keeps the cake tender. 6. [To Bake:] Pour half the batter into the prepared pan and spread it to the edges. Sprinkle half the streusel evenly over the top. 7. [To Bake:] Pour the remaining batter over the streusel layer and spread it gently to cover. Top with the remaining streusel. 8. [To Bake:] Bake 30-32 minutes, until a toothpick inserted in the center comes out clean but with a few moist crumbs. 9. [To Bake:] Transfer to a wire rack and cool completely before slicing into 16 pieces.
