A fabulous way to use the brown bananas no one wants to eat! Yield: 12 Prep time: PT10M Cook time: PT60M Total time: PT70M Ingredients - 2 bananas (, 1 cup (250g) of mashed bananas) - ½ cup (115g) softened butter or Stork - 2 large eggs - 1 tsp almond or vanilla extract - 1 cup (200g) sugar, caster or light brown sugar - 2 cups (250g) self-rising flour ((= self-raising flour)) - 1 tsp baking powder - 1 tsp ground cinnamon - 2 tbsp Demerara sugar (, optional) - ¼ cup (55g) butter - ½ cup (100g) sugar - ¼ cup (60ml) heavy cream - ½ tsp almond or vanilla extract Instructions 1. Preheat the oven to 350°F (180°C) and line a 2 lb (900g) loaf tin with a loaf liner or grease with butter and line with baking paper. 2. Mash the bananas with a fork or liquidize in a food processor. 3. Add all ingredients into a mixing bowl and use an electric hand mixer to beat them until you have a smooth batter. 4. Spoon the batter into the tin and level. Sprinkle with the Demerara sugar and bake for about an hour, or until the banana bread is well risen and golden. A skewer inserted in the center should come out clean. 5. Lift the cake out of the tin and cool on a wire rack. 6. Make the sauce, if using. Melt the butter in a small saucepan over low heat, add the sugar and stir until the sugar dissolves – do not allow it to boil! Stir in the cream and almond extract until you have a velvety golden sauce. 7. Serve your banana bread plain or drizzle with the sauce for extra deliciousness.
