This one is super high in protein too. A guaranteed good start to your day. Yield: 8 servings Prep time: PT5M Cook time: PT5M Total time: PT10M Ingredients - 2tbsp Coconut Oil - 30g Hazelnut - 2 Egg - 100g Oats - 100g Shelled Hemp Seeds - 100g Pumpkin Seed - 100g Sunflower Seeds - 2tbsp Maple Syrup - 50g Quinoa - 0.5tsp Cinnamon - 0.5tsp Sea Salt - 6tbsp Vanilla Protein Powder Instructions 1. Heat the air fryer to 160°C. 2. If the coconut oil is solid, melt it in a saucepan over a low heat. Alternatively pop it in the microwave in a microwave-safe bowl for 15 seconds at a time, stirring between each burst until completely melted. 3. Crush the hazelnuts with a large knife then chop into small pieces. Add to a large bowl along with all the other ingredients, except the egg whites. 4. Seperate the egg whites from the yolks (you can use the yolks to make your own mayonnaise). Add the egg whites to a separate large bowl and whisk until soft and fluffy (this will take around 4-5 mins with a hand whisk). Gently fold the egg white through the dry ingredients. 5. Add the uncooked granola to the air fryer tray in a single layer (you might need to do this in batches). Cook for 15-20 mins, mixing halfway, until completely golden and toasty. 6. Leave to cool before serving immediately, or storing in an airtight container for up to 10 days.
