It works on top of yogurt, smoothie bowls, or all by itself. Many store-bought brands contain artificial sweeteners or additives, so we make our own healthy, naturally-sweetened homemade crunchy granola! Yield: 3 servings Prep time: PT10M Cook time: PT22M Total time: PT32M Ingredients - 1 cup large, toasted coconut shavings - 1/2 cup pumpkin seeds - 3/4 regular oats - 1/2 cup chopped walnuts - 1 tsp cinnamon - 1/4 tsp sea salt - 1/8 cup smooth almond butter - 1/4 coconut oil (measured solid) - 1 tbs raw honey - 1/4 cup syrup - 1 tsp vanilla Instructions 1. Preheat the oven to 300 degrees. 2. In a large bowl combine the dry ingredients and mix. 3. In a small pot combine the wet ingredients and heat on low (if you place the stove too hot the almond butter will burn). 4. Whisk frequently until all wet ingredients are combined. 5. Pour the wet mixture into the bowl of dry and mix well until everything is coated and semi sticky- try not to eat it all here!. 6. Line a pan with parchment paper and spread granola mixture evenly over the pan. Try to keep the granola together and not spread apart but keep the layer thin. 7. Bake for 12 minutes. Remove from the over and stir placing the granola back into a single layer. 8. Bake another 10-12 minutes keeping watch carefully in the last two minutes. You want the granola to be just starting to brown. Any longer and it will burn. 9. Remove the pan from the oven and let sit on the counter for one hour. 10. The granola will harden as it sits. 11. After an hour, break granola apart as much as preferred and store in mason jars in the fridge.
