Yield: 6 serving(s) Prep time: PT10M Cook time: PT0S Total time: PT55M Ingredients - 8 oz. dried wide egg noodles (about 4 cups) - Kosher salt - 4 tbsp. unsalted butter - 1 small yellow onion, finely chopped - 1 large celery rib, finely chopped - Freshly ground black pepper - 2 garlic cloves, finely chopped - 1/4 c. all-purpose flour - 2 c. low-sodium chicken broth - 2 c. whole milk - 2 tsp. Dijon mustard - 1 tbsp. finely chopped fresh dill, plus more for serving - 2 c. shredded white sharp cheddar, divided - 3 c. shredded cooked chicken - 1 (10-oz.) package frozen peas and carrots, thawed (about 2 1/2 cups) - 1 sleeve Ritz crackers, crushed - 1 tbsp. extra-virgin olive oil Instructions 1. Arrange a rack in center of oven; preheat to 400°. In a large pot of boiling salted water, cook egg noodles, stirring occasionally, until al dente according to package directions. Drain, then return to pot. 2. Meanwhile, in a large (at least 12”) ovenproof skillet over medium-high heat, melt butter. Add onion and celery; season with a large pinch of salt and pepper. Cook, stirring, until vegetables are tender, about 7 minutes. Add garlic and flour and cook, stirring, until fragrant, about 1 minute more. 3. Add broth and milk. Bring to a simmer, stirring frequently, until thick enough to coat the back of a spoon, about 12 minutes. Remove from heat. 4. Stir in mustard, dill, and 1 cup cheese; season with ¾ tsp. salt and a few grinds of pepper. Add noodles, chicken, and peas and carrots, then stir until coated. 5. In a medium bowl, stir crackers, oil, and remaining 1 cup cheddar. Sprinkle over chicken mixture in skillet. 6. Transfer to oven and bake casserole until bubbling and cracker crumbs are browned, 20 to 25 minutes. Transfer to a wire rack and let cool slightly. Top with dill.
