They have no refined sugar and are totally oil-free. Even the kids will love them!  Prep time: PT10M Cook time: PT10M Total time: PT20M Ingredients - 1/2 cup natural peanut butter - 1/3 cup coconut sugar - 2 tbsp applesauce - 1/2 tsp vanilla extract - 1/4 cup gluten-free flour (I used the Trader Joe's blend) - 1/4 tsp baking soda - 1/3 cup chocolate chips (I used mini ones) Instructions 1. Preheat the oven to 350 degrees F and line a baking sheet with parchment paper. 2. Add the natural peanut butter, coconut sugar, applesauce and vanilla extract to a mixing bowl. Mix until completely combined. 3. Add flour and baking soda to the wet ingredients and mix. Don't over mix! Fold in the chocolate chips. 4. Measure out a heaping tbsp of the dough for each cookie, roll into a ball then flatten them into a cookie shape. I got about 11 cookies. 5. Bake for 8-9 minutes. As they cool, they will set. Wait 20 minutes for them to completely cool. Careful not to over-bake! They will dry out.
