Ingredients

  1. 1 1/4 c. whole milk cottage cheese
  2. 1 1/2 c. low-sodium chicken broth, divided
  3. 4 slices bacon (about 4 oz.), cut into 1/2" pieces
  4. 3 (6-oz.) boneless, skinless chicken breasts
  5. 1 tsp. kosher salt, plus more
  6. Freshly ground black pepper
  7. 1 shallot, finely chopped
  8. 3 garlic cloves, minced
  9. 2 tsp. fresh thyme leaves
  10. 1/4 tsp. crushed red pepper flakes
  11. 1 (17-oz.) pkg. gnocchi
  12. 3 oz. mozzarella, shredded (about 3/4 cup)
  13. 2 oz. Parmesan, finely grated (about 1 cup)
  14. 4 c. (4 oz.) fresh spinach

Instructions

  1. In a blender, blend cottage cheese and 3/4 cup broth until smooth, 30 to 60 seconds; set aside.
  2. In a large, cold skillet, arrange bacon in a single layer. Cook over medium heat, stirring, until crispy, 7 to 9 minutes. Transfer bacon to a plate; reserve fat in skillet.
  3. Season chicken on both sides with salt and black pepper and arrange in skillet in a single layer. Cook over medium heat, turning occasionally, until browned on both sides, about 6 minutes per side. (Chicken will not be fully cooked through.) Transfer chicken to another plate.
  4. In same skillet over medium heat, cook shallot and 1 tsp. salt and cook, stirring, until translucent, 3 to 4 minutes. Add garlic, thyme, and red pepper flakes and cook, stirring, until fragrant, about 1 minute more. Add 1/2 cup broth and stir, scraping up browned bits from bottom of skillet.
  5. Bring to a simmer. Add chicken; cover and simmer until chicken is cooked through and an instant-read thermometer inserted into thickest part registers 165°, 4 to 6 minutes. Transfer chicken to a clean cutting board; cover to keep warm.
  6. Return sauce to a simmer and continue to cook, uncovered, until liquid is nearly evaporated. Add reserved cottage cheese mixture and bring to a simmer. Add gnocchi and cook, stirring, until tender, 2 to 3 minutes. Fold in mozzarella and Parmesan until melted, then stir in spinach until wilted and tender. (If sauce feels too thick at this point, add remaining 1/4 cup broth.) Fold in three-quarters of bacon; season with salt, if needed.
  7. Slice chicken crosswise into pieces and return to skillet; season with black pepper. Top with remaining bacon.
