OLADI (Russian sour-cream pancakes)

In Russia, there is a saying “the first pancake always comes out lumpy.” But not these delicious fluffy bits of heaven. They are basically small pancakes you can eat with your hands, dipped in honey, Russian-style. The only difference is the addition or sour-cream, which adds just enough creaminess and a different dimension of flavor that you just have to try to believe!

Ingredients

  1. 1 cup flour
  2. 1 egg
  3. 2 tablespoons granulated sugar
  4. 1 teaspoon baking powder
  5. 1/2 cup sour cream (preferably full-fat)
  6. 1/2 cup milk
  7. Oil for frying (I do not recommend olive oil here. Try corn or sunflower.)

Instructions

  1. Whisk the egg with the sugar, then add the remaining ingredients.
  2. Mix well until everything is incorporated and the dough is just slightly lumpy.
  3. Pour a tablespoon of oil into a cool pan, then use a paper towel to spread it around and absorb any excess (you don’t want the oladi deep-fried!) – keep the paper towel handy!
  4. Heat the pan to medium-heat, then spoon the batter by the tablespoon into the pan.
  5. The batter blobs will spread into little circles.
  6. You should be able to fit about three into a regular-sized pan.
  7. Flip them when they start to slightly bubble on the surface.
  8. Use the oily paper-towel to re-oil the pan as needed between batches.
  9. Spoon your favorite sweet topping over the oladi (honey, maple syrup, cranberry sauce) and enjoy your breakfast!!
