Ingredients

  1. 1 1/2 c. dried apricots
  2. 1/4 tsp. saffron threads
  3. 1 c. boiling water, divided
  4. 2 garlic cloves, grated
  5. 1/4 c. extra-virgin olive oil
  6. 2 tsp. honey
  7. 1 tsp. sweet paprika
  8. 1/2 tsp. ground cinnamon
  9. 1/2 tsp. ground cumin
  10. 1/2 tsp. ground ginger
  11. 1/2 tsp. ground turmeric
  12. 2 tsp. kosher salt
  13. 1 small preserved lemon
  14. 2 lb. boneless, skinless chicken thighs
  15. 2 small yellow onions, cut into 2" chunks
  16. 3 small carrots, peeled, thinly sliced on the bias
  17. 1/2 c. mixed pitted olives
  18. 1/4 c. coarsely chopped fresh cilantro

Instructions

  1. Place apricots and saffron in separate heatproof bowls. Pour 1 Tbsp. boiling water over saffron, then pour remaining water over apricots. Let both steep until ready to use.
  2. In a large bowl, stir garlic, oil, honey, paprika, cinnamon, cumin, ginger, turmeric, and 2 tsp. salt.
  3. Cut lemon into quarters. Using a paring knife, separate flesh from peel. Coarsely chop flesh, removing seeds, and add to marinade. Thinly slice peel; set aside.
  4. Add saffron water to marinade, then add chicken, onion, and carrots and toss to coat. Let sit at least 30 minutes and up to overnight.
  5. Arrange a rack in upper third of oven; heat broiler. Spread chicken mixture on a foil-lined baking sheet. (It’s okay if some pieces of onion and carrot are under chicken.)
  6. Broil chicken, watching closely and rotating sheet halfway through, until browned, 8 to 9 minutes.
  7. Remove sheet from oven and flip chicken. Continue to broil until deeply browned and an instant-read thermometer inserted into thickest part registers 165°, 4 to 5 minutes more.
  8. Meanwhile, drain apricots and cut into quarters.
  9. Remove sheet from oven and add olives, apricots, and reserved lemon peel. Gently toss with onions, carrots, and sauce. Continue to broil, watching closely, until warmed through, 2 to 3 minutes.
  10. Transfer sheet to a wire rack. Top with cilantro.
