One of my test kitchen colleagues, Katja Tausig, took this idea to its limit by embedding a whole block of feta in this frittata, which appears in my cookbook “Ottolenghi Simple Too” (Ten Speed Press, 2026). Make this for Sunday supper or an easygoing brunch, take it on a picnic, play around with the herbs (chives and cilantro work well), and it might well become a keeper. It can be served warm or at room temperature.","servings":4,"servings_text":"4 to 6 servings","prep_time":"PT0H10M","cook_time":"PT0H35M","total_time":"PT0H45M","ingredients":[{"text":"8 large eggs","item":"large eggs","quantity":8},{"text":"Fine sea salt and black pepper","item":"Fine sea salt and black pepper"},{"text":"3 tablespoons olive oil","item":"olive oil","quantity":3,"unit":"tbsp"},{"text":"1 medium onion, finely chopped","item":"medium onion","quantity":1,"preparation":"finely chopped"},{"text":"1 ½ teaspoons cumin seeds, lightly crushed","item":"cumin seeds, lightly crushed","quantity":1.5,"unit":"tsp"},{"text":"4 ounces baby spinach (about 3 cups packed)","item":"baby spinach","quantity":4,"unit":"oz","preparation":"about 3 cups packed"},{"text":"1 cup finely chopped fresh dill, plus extra to serve","item":"finely chopped fresh dill","quantity":1,"unit":"cup","preparation":"plus extra to serve"},{"text":"1 (6- to 8-ounce) block of feta","item":"(6- to 8-ounce) block of feta","quantity":1},{"text":"¼ teaspoon Aleppo chile flakes","item":"Aleppo chile flakes","quantity":0.25,"unit":"tsp"},{"text":"Lime wedges, to serve","item":"Lime wedges, to serve"}],"instructions":[{"number":1,"text":"Heat the oven to 375 degrees with one rack in the top position and another rack in the middle."},{"number":2,"text":"Whisk the eggs with ½ teaspoon of salt and a good grind of pepper, then set aside."},{"number":3,"text":"Heat the oil in an 8-inch ovenproof skillet over medium-high.
