The savory filling combines creamy mashed potatoes and caramelized cabbage, seasoned with tangy sauerkraut, fragrant caraway, Parmesan and fresh dill. These dumplings are equally delicious boiled and tender or pan-fried and crisp. Leftovers can be cooked with veggies in broth for a quick and satisfying soup.","servings":48,"servings_text":"48 dumplings","prep_time":"PT30M","cook_time":"PT1H20M","total_time":"PT1H50M","ingredients":[{"text":"12 ounces Yukon Gold or yellow potatoes (from about 2 medium potatoes), peeled and cut into ½-inch dice","item":"Yukon Gold or yellow potatoes (from about 2 medium potatoes)","quantity":12,"unit":"oz","preparation":"peeled and cut into 1/2-inch dice"},{"text":"Salt and pepper","item":"Salt and pepper"},{"text":"4 tablespoons unsalted butter, divided","item":"unsalted butter","quantity":4,"unit":"tbsp","preparation":"divided"},{"text":"1 cup finely chopped leek (from 1 medium leek), white and light green parts only","item":"finely chopped leek (from 1 medium leek), white and light green parts only","quantity":1,"unit":"cup"},{"text":"4 cups finely chopped napa cabbage (about 11 ounces)","item":"finely chopped napa cabbage","quantity":4,"unit":"cup","preparation":"about 11 ounces"},{"text":"¼ cup drained sauerkraut, finely chopped","item":"drained sauerkraut","quantity":0.25,"unit":"cup","preparation":"finely chopped"},{"text":"2 tablespoons finely chopped scallions","item":"finely chopped scallions","quantity":2,"unit":"tbsp"},{"text":"½ cup finely shredded Emmenthaler or Swiss cheese (about 2 ounces)","item":"finely shredded Emmenthaler or Swiss cheese","quantity":0.5,"unit":"cup","preparation":"about 2 ounces"},{"text":"¼ cup finely grated Parmesan (about 1 ounce)","item":"finely grated Parmesan","quantity":0.25,"unit":"cup","preparation":"about 1 ounce"},{"text":"2 tablespoons finely chopped dill","item":"finely chopped dill","quantity":2,"unit":"tbsp"},{"text":"½ teaspoon caraway seeds, crushed","item":"caraway seeds","quantity":0.5,"unit":"tsp","preparation":"crushed"},{"text":"1 (12-ounce) package frozen square wonton skins, thawed","item":"(12-ounce) package frozen square wonton skins","quantity":1,"preparation":"thawed"},{"text":"Unsalted butter and sunflower or other neutral-tasting oil","item":"Unsalted butter and sunflower or other neutral-tasting oil"},{"text":"Freshly grated Parmesan and chopped or torn fresh dill, optional (for serving)","item":"Freshly grated Parmesan and chopped or torn fresh dill, optional","preparation":"for serving"}],"instructions":[{"number":1,"text":"Prepare the filling: In a medium saucepan, combine potatoes and enough water to completely cover them by at least 1 inch and bring to a boil. Season the water with salt and cook, skimming off the foam that rises to the top, until potatoes are tender, about 10 minutes. Increase heat to medium-high and cook, stirring occasionally, until the cabbage is softened, about 3 minutes. Dip a fingertip in the water and lightly moisten the wrapper edges. Bring the bottom edge of the wrapper up to fold the dumpling in half and enclose the filling and form a rectangle shape, pushing out any air bubbles. Firmly press the edges together to seal, with the filling as compact as possible (the filling should mimic the shape of the rectangle). Bring together the two bottom corners, creating a small indentation in the middle of the dumpling. Dab one corner with water and place the other corner on top, pressing to seal (the dumpling will resemble a rosebud). Transfer dumpling onto the prepared sheet. Repeat with the remaining wrappers and filling, keeping them covered with a damp kitchen towel to keep them from drying out."},{"number":6,"text":"Cook the dumplings: To boil a dozen dumplings (see next step if you prefer to pan-fry them), bring a large saucepan of water to a boil. (To cook more than a dozen at a time, use a large pot. For every 12 dumplings, you’ll need 1 tablespoon of butter to finish cooking.) Add 12 dumplings and cook until the filling is hot throughout and the wrappers are tender, 4 to 5 minutes. Drain, then return the dumplings to the hot saucepan off the heat and add 1 tablespoon of butter. Swirl the pan and gently toss the dumplings until the butter melts and coats the dumplings, then transfer to a serving plate. Top with cheese, dill or both, if using. Add 2 tablespoons of water to the skillet, quickly cover the pan and cook until all of the water is absorbed, the filling is hot and the dumpling wrappers are tender, about 3 minutes longer.
