Cinnamon Roll Blondies

Ingredients

  1. ½ cup (113g) unsalted butter, melted
  2. 1 cup (212g) packed light brown sugar
  3. 1 large egg + 1 large egg yolk, at room temperature
  4. 1 tablespoon vanilla extract
  5. 1 cup (128g) all-purpose flour
  6. ¼ teaspoon baking powder
  7. ½ teaspoon salt
  8. 1 tablespoon cinnamon
  9. 3 tablespoons (36g) granulated sugar
  10. 1 tablespoon (15g) cream cheese
  11. 4 teaspoons (20g) heavy cream
  12. 3/4 cup (90g) powdered sugar
  13. 1 teaspoon vanilla extract
  14. pinch of salt

Instructions

  1. Preheat your oven to 350°F. Line an 8 x 8-inch pan with parchment paper on all sides and set aside.
  2. In a large mixing bowl add the melted butter and brown sugar and whisk until glossy. Add the egg, egg yolk, and vanilla and whisk until combined.
  3. Add the flour, baking powder, and salt and fold together until just mixed and no streaks of flour remain. Do not over mix.
  4. Pour the batter into the prepared pan. Make the cinnamon sugar by combining the sugar and cinnamon. Drop large spoonfuls of cinnamon sugar on top of the blondie batter. Use a butter knife to create big swirls.
  5. Bake for 20 to 25 minutes or until the brownies are golden brown all over, are set on the edges and have puffed up. The middle will still feel underdone, but they will continue to cook as they cool!
  6. While the blondies cool, make the cream cheese icing. In a small sauce pan over medium low heat, add the cream cheese, heavy cream, powdered sugar, vanilla, and salt, whisking constantly until everything is melted and combined. Take off the heat and allow to cool.
  7. Once the blondies are cool, drizzle with the cream cheese glaze. Cut into 9 large squares or 16 small squares and enjoy!
