Ingredients

  1. Pie Crust: 1 frozen pie crust or homemade crust
  2. Plums: About 9 medium plums, sliced and pitted (approx. 2 lbs)
  3. Lemon Juice: 1–1.5 tablespoons, to enhance fruit flavor
  4. Sugar: ½ cup for the filling
  5. Flour: ¼ cup, thickens the filling
  6. Cornstarch: 1 teaspoon, additional thickening
  7. Salt: ¼ teaspoon
  8. Cinnamon: ¼ teaspoon for warm spice
  9. Nutmeg: ¼ teaspoon, optional

Instructions

  1. Preheat your oven to 375°F (190°C). Prepare your pie shell: use your favorite frozen pie crust or make one from scratch.
  2. Wash and dry plums. Slice them into bite-sized pieces, leaving the skins on—they add color and flavor. In a mixing bowl, toss sliced plums with lemon juice. In a separate small bowl, whisk together flour, sugar, cornstarch, salt, cinnamon, and nutmeg. Sprinkle the dry mixture over the plums and stir thoroughly. Let the mixture sit for 5–10 minutes so the juices can begin to thicken.
  3. Combine sugar, flour, brown sugar, and cinnamon in another bowl. Add cold diced butter. Use a pastry blender or your fingertips to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  4. Spoon the plum mixture into your pie crust, spreading evenly. Sprinkle the crumble topping generously over the plums. If desired, arrange the crumble artistically—clumps and peaks will brown nicely. Place the pie pan on a baking sheet lined with parchment to catch any drips.
  5. Bake on the center rack at 375°F for 50 minutes. Check at 40 minutes if your oven runs hot. The filling should bubble at the edges, and the topping should brown lightly.
  6. Once baked, let the pie cool for at least an hour. This step allows the juices to thicken and makes slicing easier. Plum pie is delicious served warm or chilled, and a scoop of vanilla ice cream or a dollop of whipped cream elevates each bite.
