Easy Cheeseburger Bombs with Biscuits

Ingredients

  1. 1 can Pillsbury butter biscuits (8 count, one bomb each)
  2. 1 lb 85/15 ground beef (leaner will work but will not be as juicy)
  3. 1 medium onion, diced
  4. 4 oz mozzarella cheese, shredded (bottom and top layer)
  5. 4 oz cheddar cheese, cut into cubes from a block (for the middle, regular grated cheddar works too)
  6. your favorite burger seasoning (to taste)
  7. 1 large egg
  8. 1 pinch salt (for the egg wash)
  9. sesame seeds (for topping)
  10. oil or cooking spray (for the baking sheet)

Instructions

  1. Make the Filling

Heat a skillet over medium-high heat and brown the ground beef, breaking it up with a spoon and seasoning it well with burger seasoning as it browns. Drain excess grease if needed and set aside.
  2. In the same skillet, saute the diced onion until soft. Set aside.
  3. Build the Bombs

Separate the 8 biscuits and roll each one out wide and flat with a rolling pin, big enough to hold the filling.
  4. Build each bomb with mozzarella on the bottom, then beef, onions, a cube of cheddar, and more mozzarella on top.
  5. Wrap the dough around the filling, pinch it closed all the way, and roll it between your palms to smooth it into a ball. They will not be perfectly round, but the closer you get them now the better they look after baking.
  6. Egg Wash and Bake

Beat the egg with a fork and a pinch of salt. Brush each bomb with the egg wash, then sprinkle with sesame seeds.
  7. Place the bombs seam side down on a lightly oiled or parchment-lined baking sheet. Bake at 350°F until puffed and golden brown, about 15 to 20 minutes. A grill running at 350°F with the lid closed does the same job.
  8. Let them cool for a few minutes before serving, since the cheese inside stays very hot. Serve with fries, tater tots, and your favorite dipping sauce.
